Alsace Pizza       Serves 2-4
Ingredients:
1 lb. flour
1 tsp salt
1 dsp. honey
1 packet dried yeast
lukewarm water
2 smoked rashers
1 small onion
3 crushed cloves of garlic
1 small tub cream
1 dsp olive oil
crushed pepper to season
grated cheddar cheese (optional)
Base:
Mix the dry ingredients in a bowl with your fingers and add the honey. Gradually add the water until the flour forms a ball. Dust with flour and knead on a floured surface for 5 mins until it becomes elastic. Place in a lightly oiled bowl and coat with the oil. Cover the bowl with a dry cloth or cling film and leave in a warm place for an hour or more until the dough has doubled in size.
Topping:
Roughly chop and fry the onion in a little oil for two mins and add the bacon chopped into strips. Drain the oil and place the onion and bacon on the base rolled out onto a greased baking tray. Crush the garlic and place on top with the pepper (and cheese). Drizzle the cream over the top and cook in a hot oven until the base turns crispy and the cream golden.
